Pectase Extra is a Pectinlyase, polygalacturonase enzyme blend formulated specifically for fruit based fermentations including Cider. Pectase Extra is effective in improving clarity in these applications.
Pectase Extra operates best under the following conditions:
Product: Pectin lyase, Polygalacturonase blend
Temp: 30-65 C (86-250 F) most effective above 45 C(113 F)
pH: 3.0-6.0 most effective between 4.0 and 5.0
Dosage: 30 ml/1,000 ml of juice
