Celluferm Pro 1X operates effectively under the following conditions:
Product: Cellulase, Pectinase blend
Temp: 30-55 degrees C(86-130 F), but is most effective above 40 C(104 F)
pH: 3.5-5.5, most effective between 4.0 and 5.0
Dosage: 15 ml of Celluferm/150 kg of fruit is sufficient. Higher levels will reduce overall fermentation time
