Alphazyme CB1 operates effectively under the following conditions:
Product: Thermostable Alpha-Amylase
Temp: 30-95 degrees C(86-203 F), but is most effective above 68 C(155 F)
pH: 4.0-8.0, most effective between 5.5 and 6.5
Dosage: 500 ml of Alphazyme/MT of grist is sufficient. Higher levels will reduce overall fermentation time
