Pectase UM operates effectively under the following conditions:
Product: Pectinase
Temp: 30-65 C(86-150 F) most effective above 45 C(113 F)
pH: 3.0-6.0 most effective between 4.0 and 5.0
Dosage: 80 ml/MT of fruit Higher dosages will result in shorter fermentation times
