In the brewing industry, Fungamyl 800 L added at the start of a fermentation run can be used to increase the fermentability of the wort. The fermentability can be increased by 2-5%.
Alphazyme 80L operates effectively under the following conditions:
Product: Fungal Alpha-Amylase
Temp: 30-64 degrees C(86-147 F), but is most effective between 50-60 C(122-140 F)
pH: 4.0-7.0, most effective between 5.0 and 6.0
Dosage: 250 ml of Alphazyme/MT of grist is sufficient. Higher levels will reduce overall fermentation time
