Acid Anionic Sanitizers/Rinses (Star San, Saniclean) - Benefits include being stable in either hot or cold temperature and the only known type of sanitizer that kills in the presence of organic matter. They are selective and non-corrosive to stainless steel. Disadvantages include corrosive on iron, generally high foaming action, and more costly than other sanitizers.
